Crock Pot Garlic Ranch Chicken — I have a new favorite easy freezer chicken recipe. Even our pickiest eater wanted seconds, then ate leftovers for lunch AND dinner the next day. It was so tender it practically fell apart when I took it out of the CrockPot. The hubs topped his side of rice with sauce from the bottom of the Crock Pot – garlicky ranchy goodness.

WHAT YOU NEED:

  • 4 uncooked boneless chicken breasts
  • 1 package of dry ranch dressing mix
  • 1 c. milk
  • 1 c. mayonnaise
  • 1 tsp. minced garlic

WHAT TO DO:

If freezing, place all ingredients in a Ziplock bag, smoosh together to mix. Label with a permanent marker and freeze. To serve, thaw then cook in slow cooker on LOW for 4-6 hours.

If eating right away, mix all ingredients in slow cooker and cook on LOW for 4-6 hours.

A while ago, I adapted a marinated mushrooms recipe from skinnyms.com and loved it. I mean, who doesn’t love ‘shrooms, garlic, soy sauce, and a hint of spice?!? Here’s what I did…

WHAT YOU NEED:

  • 16 oz mushrooms, sliced
  • 1/2 Tbs Extra-Virgin Olive Oil
  • 3 Tbs red wine vinegar
  • 4 garlic cloves, minced
  • 1 Tbs onion, chopped
  • Kosher salt to taste
  • 2 Tbs soy sauce
  • 1/2 tsp crushed red pepper flakes

WHAT YOU DO:

Rinse mushrooms or wipe them clean with a paper towel. Add mushrooms to a pan of boiling water, salt to taste, and boil for 5 minutes or untill cooked. Drain off the water.

While boiling, in a bowl, mix the EVOO, vinegar, garlic, onion, soy sauce, and red pepper flakes.

After the mushrooms are boiled and drained, put them in a deep bowl and pour the marinade on top. Tent with foil and allow everything to sit in the marinade until cooled to eating temperature.

P.S. Here’s a great addition for your pantry – gotta love Amazon Prime, you can get an entire one-gallon can of Kikoman soy sauce for only around $17, and it will last forever. I’ve used ours for tons of stir fry recipes, rice, marinades, etc.

I adapted a lemon pepper chicken recipe into a freezer recipe. The chicken turned out very moist and the best part was how easy it was to make. Also it has just a few simple ingredients so I didn’t even have to buy anything extra before preparing it.

WHAT YOU NEED:

  • 4 chicken breasts, uncooked
  • 1/2 c. extra virgin olive oil
  • 1/4 c. lemon juice
  • 1 Tbsp. lemon pepper
  • Grated parmesan cheese

WHAT YOU DO:

  • TO PREPARE RIGHT AWAY… Marinade the chicken in the oil, lemon juice, and lemon pepper. Place on a baking sheet or shallow baking dish, top with grated parmesan, then bake at 350F for 45 minutes.
  • TO FREEZE… Combine in a gallon freezer bag: chicken, oil, lemon juice, and lemon pepper. Then to prepare, thaw overnight in the fridge, then top with parmesan, and bake in the oven for 45 minutes at 350F.

Over the summer the kids and I tried a super-easy recipe for chocolate-covered blueberries. It has just two ingredients: chocolate (duh) and blueberries (double duh) LOL. They turned out really well and were fun to make and a great sweet snack.

2-Ingredient Chocolate Covered Blueberries

WHAT YOU NEED:

  • 1 bag of milk chocolate chips
  • 1-2 pints of blueberries
  • silicone mold

WHAT YOU DO:

  • Pour chocolate chips in a microwaveable bowl and microwave until melted.
  • Spoon melted chocolate into the mold.
  • Drop in a few blueberries.
  • Freeze silicone mold then pop each piece out.
  • Keep refrigerated (we put ours in cupcake liners and Ziplock bags).
