Here’s an easy recipe for light puffy breadsticks: just throw some cheese and herbs on a sheet of puff pastry and bake! You can customize these with your favorite pizza/breadstick toppings.

Puff Pastry and Cheese for an awesome batch of breadsticks

WHAT YOU NEED:

  • 1 sheet puff pastry
  • 1/4 c. grated Parmesan cheese
  • to taste: garlic powder, parsley flakes, and/or oregano
  • crushed red pepper flakes

WHAT YOU DO:

Preheat oven to 375°F. Line a baking sheet with parchment paper.

Lay the puff pastry flat on the parchment paper and sprinkle on the cheese. Add garlic powder, parsley flakes and/or oregano to taste.

Using a knife or pizza cutter, cut puff pastry in half (going the short direction). Then cut the long way into 1-inch strips.

Bake for 7-10 minutes or until golden brown.

Before serving, top with crushed red pepper flakes.

Just add cheese and herbs to puff pastry and cut into breadsticks - So easy and delicious

Inspired by a sweet and sour meatball sauce recipe in Deceptively Delicious by Jessica Seinfeld, I made these:

Sweet and Sour Meatballs Recipe - perfect as an appetizer, or serve on noodles.

They were great as fingerfood on toothpicks, but would also be tasty served on a bed of noodles! Of course you can always make the meatballs without the sweet and sour sauce, and serve them with spaghetti and red sauce. Here’s what I did…

FOR THE MEATBALLS:

  • 1 lb. ground beef (or ground turkey)
  • 1/2 c. Italian-style Panko bread crumbs
  • 1/4 c. milk
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. Worcestershire sauce
  • 1/4 c. finely chopped onion
  • 1 egg

FOR THE SAUCE:

  • 1-2 Tbs. olive oil
  • 1/2 c. chopped onion
  • 1 Tbs. brown sugar
  • 1 c. beef broth
  • 2 Tbs. ketchup
  • 1 Tbs. steak sauce
  • 1/2 c. crushed pineapple in natural juice
  • 1-2 Tbs. orange marmalade
  • optional: cornstarch (if needed for thickening)

MAKE THE MEATBALLS: Preheat oven to 400°F. In a large mixing bowl, combine meat, Panko bread crumbs, milk, salt, pepper, Worcestershire sauce, and 1/4 c. of the chopped onion. Shape mixture into meatballs; approximately 1-2 inches each. Place on cookie sheet lined with foil and sprayed with nonstick cooking spray. Bake 20 minutes or until cooked thoroughly.

WHILE MEATBALLS BAKE, MAKE THE SAUCE: In a small saucepan, heat oil on med-high heat, then add 1/2 c. onion, and sugar. Cook for a few minutes until onions are soft and starting to brown. Add broth, ketchup, steak sauce, pineapple, and marmalade. Bring to a boil, and cook a couple more minutes. If too thin, add a little cornstarch a teaspoon or so at a time until desired thickness. Strain sauce into a bowl with a mesh colander, and discard “pulp” mixture left behind in the strainer.

TO SERVE: Dip meatballs in sauce, and place on serving dish or on noodles.

Buffalo Chicken & Feta Rolls – topped with shredded mozzarella and baked (not fried)!

One of my favorite Crock Pot recipes is an easy four-ingredient Buffalo Ranch Chicken.

I recently wrapped some of this delicious slow cooker buffalo-y goodness with some cheese into some egg roll wraps and baked ’em. Verdict: delicious! Instead of egg roll wraps, you could also use the smaller won ton wraps, for a bite-size version.

Buffalo Chicken & Feta Rolls

WHAT YOU NEED:

WHAT YOU DO:

Combine chicken, sauce, and ranch mix in CrockPot. Cook on LOW for 4-6 hours. Approx 30 mins before serving, add butter, then shred the chicken with a fork.

Preheat oven to 400°F while you prepare the egg roll wraps. Place a spoonful or two of chicken on each wrap. Top each with feta, then fold as pictured (wet your finger with a little water to make a “glue” to seal the edges).

Place wraps on a baking sheet sprayed with nonstick cooking spray (or covered in foil) then bake for 12-15 mins, or until they start to crisp and brown. One to two minutes before removing from the oven, sprinkle each roll with mozzarella.

Stuffed Italian Deli Bread

Hello cheesy, baked, stuffed bread goodness! This loaf contains everything you love from an Italian deli: delicious bread, salami, pepperoncinis, mozzarella, and provolone. I can’t wait to make this in the summer on the grill, and even better, with pepperoncinis from our garden. It was a pretty easy recipe too – you just mix up the spread, spread it on, stuff it, and bake it.

Stuffed Italian Deli Bread

WHAT YOU NEED:
1 loaf Italian bread (I used poppy seed)
1 c. mayonnaise
1/2 tsp onion powder
1 tsp garlic powder
1 tsp dried parsley
4-5 basil leaves, chopped
1 tsp oregano
1/4 c. pepperoncini pepper slices
1 Tbs pepperoncini brine from the jar
1 pkg. sliced salami
1 pkg. sliced provolone
1 pkg. sliced mozzarella

WHAT YOU DO:

Preheat oven to 350°F.

Slice the bread into the size of pieces you want, but don’t cut all the way through the bottom.

In a small bowl, combine mayo, onion powder, garlic powder, parsley, basil, oregano, and pepperoncini brine. Mix until combined. Spread the mixture in between the sliced parts of bread.

Alternating provolone and mozzarella cheeses, insert a slice of cheese into each cut. Add salami into the slices, then pepperoncinis.

Wrap the entire loaf tightly with foil. Place on a baking sheet and bake 25-30 mins, or until the outside is crispy and cheese has melted.

Stuffed Italian Deli Bread Recipe - just mix, spread, stuff with salami, provolone, and mozzarella then bake. 

I love love love anything buffalo. Here’s a non-fat buffalo shrimp dip I made, lightened up with Greek yogurt. It has only 4 ingredients so it’s super quick and easy. You can serve it with crackers, wasa flatbreads, in lettuce wraps, or even just eat it straight out of the bowl ha. The entire bowl is just 5 WW+ points (or 2 “old” WW points).

Skinny Buffalo Shrimp Dip

  • 5 oz. frozen, cooked, salad shrimp; thawed according to pkg directions
  • 1/4 c. Greek nonfat yogurt (I used vanilla since that’s what we had – it sounded kinda weird but I couldn’t tell a difference than from when I use plain)
  • 1 Tbs. Frank’s Red Hot Buffalo Sauce
  • sprinkle of garlic powder

WHAT YOU DO:

  1. In a bowl, mix all ingredients.
  2. Serve.
