Here’s a delicious twist on traditional buffalo wings: marinade wings in a mixture of soy sauce, brown sugar, garlic and fresh ginger, then roast in the oven, and finally saute in sriracha, lime juice, and butter.  YUM.

I adapted this recipe from the 2017 magazine “350-Calorie Meals in Minutes” but added toasted sesame seeds.

WHAT YOU NEED:

  • 2 lbs. uncooked chicken wings
  • 1/2 c. low sodium soy sauce
  • 1/4 c. brown sugar (divided in half)
  • 4 cloves minced garlic
  • 1 Tbsp. grated fresh ginger
  • 2 Tbsp. butter
  • 1 Tbsp. sriracha
  • juice of 1/2 a lime
  • 1 Tbs. sesame seeds
  • optional: chopped scallions or green onions

WHAT YOU DO:

  1. PREPARE THE MARINADE – combine soy sauce, 1/8 c. brown sugar, garlic, and ginger in a gallon ziplock bag. Add wings, mix to coat, and seal. Marinate in refrigerator for at least an hour.
  2. TOAST THE SESAME SEEDS – Place seeds in a dry skillet and heat over medium heat for 3-5 minutes or until lightly browned, stirring occasionally (watch closely to avoid burning). Set aside.
  3. TO PREPARE MARINATED WINGS – Preheat oven to 450ºF. Remove wings from the bag and place in a single layer on a baking sheet lined with foil sprayed with non-stick cooking spray. Roast wings in the oven for approximately 15 minutes, until the meat is cooked through and the skin begins to crisp and caramelize.
  4. SAUTE THE WINGS –  In a large skillet, heat butter, sriracha, lime juice, and 1/8 c. brown sugar until melted. Add wings and saute for 3-4 minutes, or until the sauce clings to the chicken.
  5. GARNISH – with toasted sesame seeds and (optional) scallions/green onions

Buffalo Feta Deviled Eggs - no mayo but Greek yogurt, feta, and buffalo sauce - just 1 WW+ point each!Buffalo Feta Deviled Eggs Recipe – Now that Easter is over what do we do with all of these eggs?!? Ha. This year I tried a recipe with a twist on the usual deviled egg. This variation has feta cheese, buffalo sauce, and instead of mayo: Greek yogurt. There are just 44 calories per piece, or 1 WW+ point!

WHAT YOU NEED:

Peel eggs, and slice lengthwise. Remove yolks and place in a bowl. Set egg whites aside.

With a fork, mash together yolks, feta cheese, yogurt, half of the parsley, onion powder, Buffalo sauce, and celery salt. Place mixture in a zipper sandwich bag and seal. Cut off a tiny piece of a bottom corner and pipe filling into
reserved egg whites.

Garnish with remainder of parsley. Refrigerate until serving.

Sriracha Lime Garlic Roasted Chickpeas

  • Servings: 4

WHAT YOU NEED:

  • 1 can (15 oz) chickpeas (garbanzo beans); rinsed, drained and patted dry
  • 1 1/2 Tbsp sriracha hot sauce
  • 1/2 tsp garlic powder
  • juice of 1 lime
  • 1/4 tsp Kosher salt

WHAT YOU DO:

  1. Preheat oven to 400F.
  2. In a mixing bowl, whisk sriracha and lime juice together.
  3. Add chickpeas to a bowl, tossing gently to coat. Add garlic and salt, and combine.
  4. Spread chickpeas on a parchment paper lined baking sheet. Bake for 45-50 mins stirring/shaking pan every 15 mins or so.
  5. Remove from oven once chickpeas reach your desired texture.

WHAT YOU NEED:

  • 24 won ton wrappers
  • 1 lb. ground beef
  • 1 packet taco seasoning
  • 2 Tbs picante sauce
  • 1/2 c. chunky salsa
  • 1 c. shredded Mexican cheese blend
  • Optional toppings: sour cream, sliced olives, guacamole, shredded lettuce, black beans, chopped tomatoes

WHAT YOU DO:

  • Preheat oven to 425F.
  • Press won ton wrappers into a 24-cup mini muffin pan.
  • Brown beef in a skillet over medium-high heat until crumbled and thoroughly cooked. Drain fat. Stir in taco seasoning and picante sauce.
  • Spoon beef mixture into wonton cups. Top with salsa and cheese.
  • Bake for 5 minutes or until the wontons are golden brown and cheese is melted.
  • Garnish with additional toppings (optional) and serve.

One of my favorite summer recipes is a mozzarella cheese, tomatoes, basil and olive oil salad. We recently had some leftover crusty garlic bread (I don’t know why, but I hate the word “crusty”) so I made a crostini with fresh mozzarella, cherry tomatoes, basil, and the bread. It was basically the mozzarella and tomato salad on top of garlic-y toasted goodness. Here’s how it turned out:

Fresh Mozzarella, Tomato, and Basil Crostini

WHAT YOU NEED:

  • French bread, cut into thin slices (however many slices you need)
  • A few Tablespoons of Extra Virgin Olive Oil
  • 1/4 tsp. minced garlic
  • 10-20 cherry tomatoes (depending on how many slices of bread you have), chopped
  • Fresh basil leaves
  • Sliced fresh mozzarella cheese (I used one slice per crostini)

WHAT YOU DO:

  • Brush bread slices with EVOO and sprinkle with garlic. Place on a baking sheet. Broil in the oven for 3-5 mins until toasted.
  • In a bowl, mix tomatoes, a drizzle of EVOO, and salt and pepper to taste.
  • After bread is toasted, place slices on a serving platter. Top with a slice of mozzarella, then tomato mixture. Garnish with fresh basil.

Delicious and simple crostini - just a few ingredients but tons of flavor.

Here’s an easy snack I made with a zucchini from our garden: Cheesy Baked Pizza Bites

Delicious Zucchini Pizza Bites - cheesy baked goodness. Low carb and great meatless option. Can also top with veggies, or other fave pizza toppings.

WHAT YOU DO: Slice a zucchini, and place the slices on a foil lined baking sheet. Top with marinara sauce (or pizza sauce) and shredded Parmesan cheese. Broil in the oven for 3-5 mins, or until cheese starts to bubble and brown.

Buffalo Cauliflower “Wings” – I looooooovvvve anything spicy and/or buffalo! Here’s a recipe for baked cauliflower, breaded and coated with wing sauce. They are pretty much wings. Without the wings HA!

WHAT YOU NEED:

  • 1 head cauliflower
  • 1 cup skim milk
  • 3/4 c. flour
  • 1 Tbs. garlic powder
  • 1 Tbs. butter
  • 1/2 c. Frank’s Buffalo Sauce
  • Ranch dressing, for dipping

WHAT YOU DO:

Preheat oven to 450F. Trim the cauliflower into bite-sized pieces and set aside. In a bowl mix together milk, flour, and garlic powder. Dip each piece of cauliflower into the batter and let the extra batter drip off. Place on a greased baking sheet. Spray the tops of the cauliflowers with cooking oil. Bake for 18-20 mins.

Melt the butter in a saucepan over low heat and add the buffalo sauce, then stir. Toss cooked cauliflower pieces with the sauce. Place back on cookie sheet and bake for 5-7 additional mins. Serve with a side of dressing.

Here is one of the easiest dips on earth! Just in time for the Big Game.

It has only 3 ingredients; cream cheese, chili, and shredded cheese. Bake for 20 minutes and you’re set.

WHAT YOU NEED:

  • 2 packages cream cheese (8 oz each)
  • 1 can chili (or 1 1/2-2 cups homemade)
  • 1 1/2 c. shredded cheese

WHAT YOU DO:

  • Preheat oven to 350F.
  • In an oven-safe baking dish or pie plate, spread the cream cheese out evenly, then layer on the chili, and then top with cheese.
  • Bake uncovered for 20 minutes, or until the cheese is melted and starts to bubble.
  • Let sit 5-10 minutes, then serve with chips or crackers.

Here is an easy salsa: Mango Salsa. You lika tha Mango? 😉

It has just a few fresh simple ingredients, yet still bursts with flavor. I paired it with tortilla chips, but you could also use it as a topping for a main course such as tacos, fish, or chicken.

WHAT YOU NEED:

  • 2 mangos, chopped
  • 1 red onion, chopped
  • 1 bunch cilantro, stems removed and chopped
  • 1 lime

WHAT YOU DO:

In a bowl, combine mangos, onion, and cilantro. Squeeze the lime juice into the mixture & stir to combine. Chill for one hour to let flavors blend.

I was so excited to find an awesome sale on fresh mozzarella the other day. I love pairing it with fresh tomatoes, basil, and olive oil. Here’s what I came up with:

WHAT YOU DO

Combine the following, then chill in the fridge before serving:

  • 2 oz. fresh mozzarella cheese, cut into chunks
  • 5 cherry tomatoes, sliced
  • 1 tsp. extra virgin olive oil
  • basil, to taste (usually I use fresh basil, but this time I used dried sweet basil)
  • salt & pepper, to taste

Not only is this fresh, fairly healthy, and delicious, the entire serving is just 4 Weight Watchers Plus points!
