My blender is getting a workout because I’m on a smoothie kick! Here’s a super-filling and tasty smoothie recipe: Chocolate Banana Avocado. 

Chocolate Banana Avocado Smoothie Recipe - Only 147 calories and less than 9 grams fat - uses almond milk

WHAT YOU NEED:

  • 8 ounces unsweetened vanilla almond milk
  • 1/4 avocado, peeled and pitted
  • 1/2 frozen banana (peel and cut into chunks before freezing)
  • 2 Tablespoons unsweetened cocoa powder
  • 1 individual packet Splenda

WHAT YOU DO:

Combine all ingredients in a blender and mix. Serve and enjoy.

Here’s an easy and delicious smoothie you can make with just four ingredients: a Berry Banana Breakfast Smoothie. It’s just unsweetened vanilla almond milk, frozen banana chunks, frozen fruit, and quick oats. Also there are only 3 WW pts+ per serving!

WHAT YOU NEED:

  • 8 oz. unsweetened vanilla almond milk
  • 1/2 c. frozen berries (I used Trader Joe’s Very Cherry Berry Blend)
  • 1/2 of a banana, frozen (peel and cut into chunks before freezing)
  • 1/2 c. quick oats

WHAT YOU DO:

Combine all ingredients in blender and mix together. Makes two servings.

I’m pretty sure I’m the last person on earth to try Greek yogurt. I tried it only recently and now think it’s the bees knees 😉 Not to mention it’s thick and creamy since the liquid is strained out, and it has lots of protein, so it’s fairly healthy (and low in Weight Watchers+ Points, if you’re into that).

So I decided to try it in a smoothie and broke out the blender, which reminded me of my high school days working at an Orange Julius lol. I used one of my favorite fruit combos: strawberry banana, and threw in some spinach to add extra nutrients without it tasting like a vegetable.

This smoothie was so filling and delicious, and perfect for the awesome early-summer weather we’re having.

Here’s what I came up with…

COMBINE IN A BLENDER AND BLEND UNTIL SMOOTH:

  • 1 c. sliced strawberries
  • 1 sliced banana
  • 1 c. fresh spinach
  • 1/2 c. vanilla Fage FruYo Greek Yogurt (0% fat)
  • 1/2 c. water OR a few ice cubes

The entire serving has only 3 WW+ points, since the 1/2 c. yogurt is 3 points, and the fruits and veggies are free. Yippee!

Cream Cheese Banana Nut Bread AKA Blizzard Bread

Here is the latest banana bread recipe I tried. I made some for a weekend trip back home, and this bread ended up accompanying us through a blizzard in which we got stranded and slept in a church overnight until the roads cleared.

This recipe (adapted from sugarandspice-celeste.blogspot.com) makes 2 loaves. I doubled it and froze the extras.

Cream Cheese Banana Nut Bread AKA Blizzard Bread

WHAT YOU NEED:

3/4 c. butter, softened
1 (8 oz.) pkg. cream cheese, softened
2 c. sugar
2 large eggs
3 c. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
4 mashed bananas
1 cup roughly chopped pecans, toasted
1/2 tsp. vanilla extract

WHAT YOU DO:

Beat butter and cream cheese with an electric mixer on medium speed until creamy. Gradually add sugar, beating until light and fluffy. Add eggs and beat just until blended. Combine flour, baking powder, baking soda, and salt then gradually add to butter mixture beating at low speed just until blended. Stir in bananas, pecans, and vanillla. Spoon batter into 2 greased and floured 8×4″ loafpans.

Bake at 350F for 1 hour or until a long wooden pick inserted in center comes out clean and sides pull away from pan, shielding with aluminum foil last 15 minutes to prevent browning. Cool bread in pans on wire racks for 10 minutes. Remove from pans, and cool 30 minutes on wire racks before slicing.

To freeze: after bread is completely cooled, wrap tightly in plastic wrap OR foil then seal in a ziplock bag. Mark the date with a Sharpie (keeps for up to 3 months).

***As a sidenote, I saved the peels and put them in the freezer until spring/summer, so I can blend them up and bury them next to our rose bushes as a fertilizer.
