Here’s a delicious twist on traditional buffalo wings: marinade wings in a mixture of soy sauce, brown sugar, garlic and fresh ginger, then roast in the oven, and finally saute in sriracha, lime juice, and butter.  YUM.

I adapted this recipe from the 2017 magazine “350-Calorie Meals in Minutes” but added toasted sesame seeds.

WHAT YOU NEED:

  • 2 lbs. uncooked chicken wings
  • 1/2 c. low sodium soy sauce
  • 1/4 c. brown sugar (divided in half)
  • 4 cloves minced garlic
  • 1 Tbsp. grated fresh ginger
  • 2 Tbsp. butter
  • 1 Tbsp. sriracha
  • juice of 1/2 a lime
  • 1 Tbs. sesame seeds
  • optional: chopped scallions or green onions

WHAT YOU DO:

  1. PREPARE THE MARINADE – combine soy sauce, 1/8 c. brown sugar, garlic, and ginger in a gallon ziplock bag. Add wings, mix to coat, and seal. Marinate in refrigerator for at least an hour.
  2. TOAST THE SESAME SEEDS – Place seeds in a dry skillet and heat over medium heat for 3-5 minutes or until lightly browned, stirring occasionally (watch closely to avoid burning). Set aside.
  3. TO PREPARE MARINATED WINGS – Preheat oven to 450ºF. Remove wings from the bag and place in a single layer on a baking sheet lined with foil sprayed with non-stick cooking spray. Roast wings in the oven for approximately 15 minutes, until the meat is cooked through and the skin begins to crisp and caramelize.
  4. SAUTE THE WINGS –  In a large skillet, heat butter, sriracha, lime juice, and 1/8 c. brown sugar until melted. Add wings and saute for 3-4 minutes, or until the sauce clings to the chicken.
  5. GARNISH – with toasted sesame seeds and (optional) scallions/green onions

Buffalo Feta Deviled Eggs - no mayo but Greek yogurt, feta, and buffalo sauce - just 1 WW+ point each!Buffalo Feta Deviled Eggs Recipe – Now that Easter is over what do we do with all of these eggs?!? Ha. This year I tried a recipe with a twist on the usual deviled egg. This variation has feta cheese, buffalo sauce, and instead of mayo: Greek yogurt. There are just 44 calories per piece, or 1 WW+ point!

Peel eggs, and slice lengthwise. Remove yolks and place in a bowl. Set egg whites aside.

With a fork, mash together yolks, feta cheese, yogurt, half of the parsley, onion powder, Buffalo sauce, and celery salt. Place mixture in a zipper sandwich bag and seal. Cut off a tiny piece of a bottom corner and pipe filling into
reserved egg whites.

Garnish with remainder of parsley. Refrigerate until serving.

Buffalo Chicken & Feta Rolls – topped with shredded mozzarella and baked (not fried)!

One of my favorite Crock Pot recipes is an easy four-ingredient Buffalo Ranch Chicken.

I recently wrapped some of this delicious slow cooker buffalo-y goodness with some cheese into some egg roll wraps and baked ’em. Verdict: delicious! Instead of egg roll wraps, you could also use the smaller won ton wraps, for a bite-size version.

Baked Buffalo Ranch Chicken Egg Roll Wraps with feta and mozzarella

Buffalo Chicken & Feta Rolls

WHAT YOU NEED:

WHAT YOU DO:

Combine chicken, sauce, and ranch mix in CrockPot. Cook on LOW for 4-6 hours. Approx 30 mins before serving, add butter, then shred the chicken with a fork.

Preheat oven to 400°F while you prepare the egg roll wraps. Place a spoonful or two of chicken on each wrap. Top each with feta, then fold as pictured (wet your finger with a little water to make a “glue” to seal the edges).

Place wraps on a baking sheet sprayed with nonstick cooking spray (or covered in foil) then bake for 12-15 mins, or until they start to crisp and brown. One to two minutes before removing from the oven, sprinkle each roll with mozzarella.

I love love love anything buffalo. Here’s a non-fat buffalo shrimp dip I made, lightened up with Greek yogurt. It has only 4 ingredients so it’s super quick and easy. You can serve it with crackers, wasa flatbreads, in lettuce wraps, or even just eat it straight out of the bowl ha. The entire bowl is just 5 WW+ points (or 2 “old” WW points).

Skinny Buffalo Shrimp Dip

  • Servings: 1-2

WHAT YOU NEED:

  • 5 oz. frozen, cooked, salad shrimp; thawed according to pkg directions
  • 1/4 c. Greek nonfat yogurt (I used vanilla since that’s what we had – it sounded kinda weird but I couldn’t tell a difference than from when I use plain)
  • 1 Tbs. Frank’s Red Hot Buffalo Sauce
  • sprinkle of garlic powder

WHAT YOU DO:

  1. In a bowl, mix all ingredients.
  2. Serve.

This weekend we grilled some buffalo lime marinaded chicken breasts and they were delicious!

I adapted a recipe from sweetlittlebluebird.com and stored it in the freezer until we needed it. Here’s what we ended up with:

Kickin Buffalo Lime Chicken grilled sandwich - Add your favorite toppings - hello summer!

WHAT YOU NEED:

  • 4-6 uncooked boneless chicken breasts
  • 1 c. Frank’s Red Hot Wings Buffalo Sauce
  • 1/4 c. Extra Virgin Olive Oil
  • 1/4 c. lime juice + more if you want to squeeze some on top before serving
  • 1 tsp. minced garlic
  • Optional: sandwich buns, toppings such as onions, provolone cheese, mayo, shredded lettuce, sliced tomatoes, Ranch dressing, buffalo sauce for dipping, etc.

WHAT YOU DO:

Place in a gallon ziplock bag: chicken, sauce, EVOO, lime juice, and garlic. Place in refrigerator and allow to marinade for 4-ish hours. Remove chicken from marinade and grill. While grilling, baste with marinade.

OR if freezing, combine all ingredients in a gallon ziplock bag, label, and freeze. Before grilling, remove from freezer and thaw. Remove chicken from marinade and grill. While grilling, baste with marinade.

Buffalo Chicken Pasta

Slow Cooker Buffalo Chicken Pasta {recipebookandmore.wordpress.com} Cheesy, Buffalo-y, and delicious!

WHAT YOU NEED:

  • 4 boneless skinless chicken breasts (approx. 2 lbs.), uncooked, seasoned with salt, pepper, and garlic powder
  • 2 cans Cream of Chicken soup (do not add water)
  • 1 c. Frank’s Red Hot Buffalo Wing Sauce
  • 1/2 red onion, chopped
  • 2 c. sour cream
  • 1/2 c. ranch dressing
  • 1 c. mozzarella cheese
  • 1 box (1 lb.) penne pasta

WHAT YOU DO:
In slow cooker, add chicken, soup, wing sauce, and onion. Mix well then cover. Cook 3-4 hrs on HIGH or 7-8 hrs on LOW. Partway through, shred chicken with a fork (or cut into small pieces if you prefer).

Approx. 15-20 mins before serving, boil the pasta according to instructions on box and drain. To the slow cooker, add sour cream, ranch dressing, and mozzarella cheese. Add pasta noodles and stir until mixed. Let sit a few minutes then serve.
