Here’s an awesome slow cooker recipe that is Whole30 compliant: Slow Cooker Turkey Meatballs and Marinara. Nestle some browned meatballs in a homemade red sauce in your slow cooker and let it do its thing. Serve over baked spaghetti squash, or spiralized zucchini “noodles” AKA zoodles.

WHAT YOU NEED:

Marinara Sauce

  • 3 Tbsp. olive oil
  • 1.5 cups finely diced sweet onion
  • 1.5 cups finely diced carrots
  • 4-5 large cloves garlic, minced
  • 3 (28oz.) cans crushed tomatoes
  • 1-2 cans (6 oz. each) tomato paste
  • 1.5 Tbsp. dried basil
  • 1.5 Tbsp. dried oregano
  • 1.5 Tbsp. sea salt
  • 1/2 tsp. red pepper flakes
  • 1.5 Tbsp. balsamic vinegar
  • 3 bay leaves

Turkey Meatballs

  • 4 lbs. ground turkey
  • 2 large eggs
  • 2 Tbsp. coconut flour
  • 4 cloves garlic, minced
  • 3 tsp. sea salt
  • 2 tsp. onion powder
  • 2 tsp. dried basil
  • 1 tsp. dried oregano
  • 1/2 tsp. cayenne pepper

WHAT YOU DO:

To make the marinara sauce:

  • Heat a large skillet over med-high heat. Add olive oil, onion, carrots and garlic. Sauté veggies until carrots soften, approx. 5 minutes. Transfer the mixture to a 6-qt slow cooker.
  • Wipe out skillet and set aside to use for browning the meatballs.
  • Add remaining marinara sauce ingredients to slow cooker then whisk to combine.

To make the meatballs:

  • Put all of the ingredients for the turkey meatballs in a large mixing bowl. Using a fork (or hands if you’re into that, ha), combine the ingredients. Divide mixture to form approximately meatballs. (a 2-Tablespoon cookie scoop helps)
  • Reheat the skillet over med-high heat. Add a tablespoon of olive oil. Working in batches, lightly brown all sides of the meatballs in the hot skillet (3-4 minutes per batch). Add more olive oil to the skillet as needed to complete the browning process. Place browned meatballs on a paper towel-lined baking sheet to absorb any excess oil.
  • Place browned meatballs in marinara sauce in slow cooker. Cover and cook on low 6-8 hours.
  • To serve, place cooked meatballs in serving bowl. Discard bay leaves. For more fresh garlic flavor, season sauce with 2-3 more cloves of minced garlic.
  • Optional: Place marinara sauce on spiralized zucchini “noodles” or baked spaghetti squash. Top with meatballs and enjoy.
  • You can freeze or refrigerate leftovers for quick future meals.

MAKE-AHEAD OPTION if you want to partially prep this recipe, cook the veggies as instructed above, transfer them to a freezer-safe container, and freeze. Prepare the meatballs using the recipe above until browned. Place browned meatballs on a parchment-lined baking sheet and put into the freezer to “flash freeze.” Once they’re frozen solid, transfer them to a freezer-safe container and freeze. When you’re ready to prepare this recipe, just add the frozen, prepped ingredients to the slow cooker.

Inspired by a sweet and sour meatball sauce recipe in Deceptively Delicious by Jessica Seinfeld, I made these:

Sweet and Sour Meatballs Recipe - perfect as an appetizer, or serve on noodles.

They were great as fingerfood on toothpicks, but would also be tasty served on a bed of noodles! Of course you can always make the meatballs without the sweet and sour sauce, and serve them with spaghetti and red sauce. Here’s what I did…

FOR THE MEATBALLS:

  • 1 lb. ground beef (or ground turkey)
  • 1/2 c. Italian-style Panko bread crumbs
  • 1/4 c. milk
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. Worcestershire sauce
  • 1/4 c. finely chopped onion
  • 1 egg

FOR THE SAUCE:

  • 1-2 Tbs. olive oil
  • 1/2 c. chopped onion
  • 1 Tbs. brown sugar
  • 1 c. beef broth
  • 2 Tbs. ketchup
  • 1 Tbs. steak sauce
  • 1/2 c. crushed pineapple in natural juice
  • 1-2 Tbs. orange marmalade
  • optional: cornstarch (if needed for thickening)

MAKE THE MEATBALLS: Preheat oven to 400°F. In a large mixing bowl, combine meat, Panko bread crumbs, milk, salt, pepper, Worcestershire sauce, and 1/4 c. of the chopped onion. Shape mixture into meatballs; approximately 1-2 inches each. Place on cookie sheet lined with foil and sprayed with nonstick cooking spray. Bake 20 minutes or until cooked thoroughly.

WHILE MEATBALLS BAKE, MAKE THE SAUCE: In a small saucepan, heat oil on med-high heat, then add 1/2 c. onion, and sugar. Cook for a few minutes until onions are soft and starting to brown. Add broth, ketchup, steak sauce, pineapple, and marmalade. Bring to a boil, and cook a couple more minutes. If too thin, add a little cornstarch a teaspoon or so at a time until desired thickness. Strain sauce into a bowl with a mesh colander, and discard “pulp” mixture left behind in the strainer.

TO SERVE: Dip meatballs in sauce, and place on serving dish or on noodles.

Crock Pot Black Bean Enchiladas Recipe - easy and delicious slow cooker meal

Slow-Cooker Cheesy Black Bean Enchiladas Recipe

  • 1/2 onion, diced
  • 1 can (16 oz.) black beans, drained and rinsed
  • 2 tsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. kosher salt
  • 3 c. of your favorite shredded cheese (Monterey jack, colby, cheddar, etc.)
  • 2 jars (approx. 16 oz. each) salsa
  • 1 package corn tortillas, warmed according to instructions on pkg.
  • 1 lb ground meat (beef, turkey, or chicken), browned and drained
  • optional toppings: sliced olives, sour cream, salsa, guacamole, jalapenos, etc.

In a medium bowl, mix together the filling: onion, beans, spices, meat, and approx. 1/2 to 1 c. of the cheese.

Spread approximately 1 c. of salsa over the bottom of slow cooker, enough to evenly coat the bottom with a thin layer.

Fill each of the tortillas with about 1/3 c. of filling, roll tightly, and pack seam-side down into the bottom of the slow cooker.

Spread another cup of salsa over the top and sprinkle with more (but not all) of the remaining cheese. Continue rolling the remaining tortillas with the remaining filling to make one more layer; sprinkle any leftover filling on top. Finish by pouring another cup of salsa over the top of the enchiladas.

Reserve the last part of the cheese to add later.

Cover slow cooker with lid and cook on HIGH for 2 to 4 hours. For the final 15 min. of cooking, sprinkle remaining cheese over the top, re-cover, and finish cooking.

Serve enchiladas with optional toppings.

Crock-Pot Programmable Cook and Carry Slow Cooker

Here’s a lasagna that I made in a cast iron skillet, that can go straight into the oven to bake. Gotta love one-pot meals! I used ground turkey since it’s a little healthier than beef, but any ground lean meat would work. It was cheesy and delicious.

One-Skillet Lasagna

WHAT YOU NEED:

1 lb. lean ground turkey
1 c. diced red onion
3 cloves garlic, minced
1 tsp. oregano
2 (15 oz.) cans diced tomatoes containing garlic and onions, undrained
16 oz. tomato sauce
1 c. water
10 oz. wide egg noodles
4 oz. part skim ricotta cheese
salt and pepper to taste
2 c. shredded Italian Blend cheese
optional: fresh basil for garnish

WHAT YOU DO:

In a cast iron skillet (or oven-safe pan), brown turkey over med-low heat until thoroughly cooked.

Drain grease from turkey, and return to skillet.

Add onion, and cook, stirring occasionally, for 5 mins. Add garlic and oregano and cook for another minute or so.

Stir in tomatoes, tomato sauce, water, and noodles.

Cook, stirring often, for approx 10 mins, or until noodles are al dente.

Stir in ricotta, then and add salt & pepper to taste.

Remove from heat and top with shredded cheese. Let sit for about 5 mins to allow cheese to melt.

Place skillet in oven and broil for 3-5 mins, or until cheese starts to get brown and bubbly.

Garnish with fresh basil (optional) then serve.
