Cucumber Avocado Tomato Salad Recipe - fresh and delicious not to mention easy!

WHAT YOU NEED:

  • 1 pint grape tomatoes, sliced into halves or quarters
  • 2 cucumbers, sliced then cut in half
  • ½ red onion, diced
  • 3 avocados, chopped
  • 1 clove garlic, minced
  • 2-3 Tbsp. extra virgin olive oil
  • 2-3 Tbsp. fresh squeezed lemon juice
  • 1 Tbs. chopped fresh dill
  • sea salt and black pepper, to taste

WHAT YOU DO:

Place tomatoes, cucumbers, onions, avocados, garlic, and dill in a large bowl.

Drizzle with olive oil and lemon juice. Toss gently to combine.

Just before serving, season with salt and pepper.

Here’s an addicting Chex party mix idea: use pretzel goldfish crackers, ranch dressing mix, lots of cereal (just for the halibut I tried some Kix with the Chex, really got crazy in here ha), and baby goldfish crackers, seasoned with parmesan cheese and ranch. I made a big batch in a 12×19 inch foil pasta/roasting pan, and baked it in the oven. Here’s how it turned out…. And if you have other tasty snack mix recipes like this, let minnow. Get it?!? Oh fish puns.

Preheat oven to 250°F. Place butter in a large ungreased roasting pan, and put in the oven to melt. Add remaining ingredients in the pan, and stir until coated. Bake uncovered for 1 hour, stirring every 15-20 minutes or so. Spread on paper towels to cool. Store in an airtight container.

One-Pot Beef and Guinness Stew Recipe

Easy freezer-friendly beef stew. Perfect for St. Patrick’s Day or anytime you crave warm comfort food. Just start everything in a dutch oven or heavy pot on the stove, and transfer the whole thing to the oven.

WHAT YOU NEED:

  • 4 lbs. beef chuck, cut into 1-inch cubes
  • 1/4 c. flour
  • 12 oz. tomato paste
  • 2 1/2 lbs. small potatoes (I used a mixture of red and yellow), cut into chunks
  • 2 white onions, diced
  • 32 oz. beef broth
  • Irish stout beer – I used one 11-oz. bottle of Guinness Extra Stout
  • 10 garlic cloves, minced
  • Coarse salt and ground pepper, for seasoning
  • 16 oz. frozen baby peas, thawed

WHAT YOU DO:

Preheat oven to 350ºF.

In a heavy pot or dutch oven (5-quart size or so) on the stovetop, toss beef with flour and stir in tomato paste. Add potatoes, onions, broth, beer, and garlic. Season with salt and pepper. Cover, and bring to a boil over medium heat, occasionally.

Cover with lid and place pot in oven. Cook until meat is fork-tender, approximately 2 1/2 to 3 hours. Stir in peas, then season with additional salt and pepper to taste.

TO FREEZE: Prepare according to recipe. Cool, then divide into a few containers, label, and freeze up to 3 months. Thaw, reheat, and serve.

One-Pot Pork Chops with Matchstick Apples & Warm Greens Recipe

I love one-pot meals! Here’s a twist on pork chops and applesauce – instead of applesauce, julienne an apple into matchsticks and toss with chickpeas and warm arugula and spinach.

This recipe makes two pork chops, but you can adjust it of course to make more.

One Pot Meal - Pork Chops with fresh apples and warm greens - Not your Momma's Pork Chops and Applesauce Recipe!

WHAT YOU NEED:

  • 2 bone-in pork chops (approx. 9 oz each)
  • Kosher salt, to taste
  • Freshly ground pepper, to taste
  • 1 Tbs extra virgin olive oil (EVOO)
  • 1/2 cup canned chickpeas, drained and rinsed
  • 5 oz. mixture of arugula and spinach, leaves torn
  • 1 Gala apple, cored and cut into matchsticks
  • 1/2 tsp lemon juice
  • 1/2 Tbs lemon zest (tip: use a rasp grater, or a vegetable peeler to make strips then chop into small pieces)

WHAT YOU DO:

Sprinkle pork chops on both sides with salt (a teaspoon or so), and season with pepper.

Heat EVOO in a large high-sided saute pan over med-high heat. Add pork chops.

Reduce heat to medium, and cook until browned around the edges, about 4 mins. Flip, and cook 3-4 more minutes. Transfer chops to a plate.

Add chickpeas to pan and cook for 2 min. Working in three batches, add arugula/spinach mixture and cook, stirring, adding additional batches as the leaves wilt. Sprinkle with approximately 1/4 to 1/2 teaspoon salt, then season with pepper to taste. Remove from heat, and stir in apple and lemon juice and zest. Serve with chops.

Here’s an easy one-pot recipe, with just three ingredients: Teriyaki Pork Chops. I used a bottled teriyaki sauce as a marinade, and seared the pork chops in a skillet with some EVOO. With just 200 calories each, these pork chops are just 5 WW PlusPoints each! The portions were quite large so you could always slice each pork chop in half (or even cut into slices and divide them into however many servings you want).

3 Ingredient Teriyaki Pork Chops

WHAT YOU NEED:

  • 3 (1-lb. total) uncooked boneless pork chops, seasoned with salt and pepper
  • 4 Tbs. teriyaki sauce
  • 1 tsp. extra virgin olive oil (EVOO)

WHAT YOU DO:

  • In a gallon ziplock bag combine pork chops and teriyaki.
  • Refrigerate 45-60 minutes to allow pork chops to marinade.
  • To prepare, heat EVOO in large skillet over med-high heat. Remove pork chops from marinade and sear for 3-4 minutes. Reduce heat to medium, flip, and sear 3-5 additional minutes or until cooked through. Serve.

Cuisinart 12-Inch Skillet

Here’s a lasagna that I made in a cast iron skillet, that can go straight into the oven to bake. Gotta love one-pot meals! I used ground turkey since it’s a little healthier than beef, but any ground lean meat would work. It was cheesy and delicious.

One-Skillet Lasagna

WHAT YOU NEED:

1 lb. lean ground turkey
1 c. diced red onion
3 cloves garlic, minced
1 tsp. oregano
2 (15 oz.) cans diced tomatoes containing garlic and onions, undrained
16 oz. tomato sauce
1 c. water
10 oz. wide egg noodles
4 oz. part skim ricotta cheese
salt and pepper to taste
2 c. shredded Italian Blend cheese
optional: fresh basil for garnish

WHAT YOU DO:

In a cast iron skillet (or oven-safe pan), brown turkey over med-low heat until thoroughly cooked.

Drain grease from turkey, and return to skillet.

Add onion, and cook, stirring occasionally, for 5 mins. Add garlic and oregano and cook for another minute or so.

Stir in tomatoes, tomato sauce, water, and noodles.

Cook, stirring often, for approx 10 mins, or until noodles are al dente.

Stir in ricotta, then and add salt & pepper to taste.

Remove from heat and top with shredded cheese. Let sit for about 5 mins to allow cheese to melt.

Place skillet in oven and broil for 3-5 mins, or until cheese starts to get brown and bubbly.

Garnish with fresh basil (optional) then serve.

Skinny Reuben Panini – here’s an old favorite comfort food that I lightened up by using turkey and fat free cheese. I cooked this in a panini maker, but you could also use a large skillet and press down with a flat pot lid or a heat-safe plate. It has 315 calories and 7 grams of fat, much less than the typical reuben loaded with corned beef and dressing.

  • 2 Tbsp sauerkraut, drained
  • nonstick cooking spray or extra virgin olive oil

WHAT YOU DO:

  1. Spread mustard on the bread slices, then layer with turkey, cheese, and kraut, making a sandwich.
  2. Spray panini maker (or skillet) with nonstick cooking spray; or brush bread with a tiny amount of EVOO.
  3. Place sandwich in, and press down on both sides. Cook until toasted and cheese has melted.

slow cooker hot chocolate - just put everything in the crock pot and voila

Here’s a decadent, rich, chocolatey cocoa that you can make in your slow cooker. Throw the ingredients in, take a drive to look at Christmas lights, and come home and enjoy a mug of THE BEST hot chocolate ever. Don’t forget to leave some out for Santa on Christmas Eve! 😉

WHAT YOU NEED:

  • 12 oz. heavy whipping cream
  • 14 oz. can sweetened condensed milk
  • 2 c. milk chocolate chips
  • 6 c. milk
  • optional toppings: whipped cream, sprinkles, cocoa powder, marshmallows, etc.

WHAT YOU DO:

Combine the whipping cream, condensed milk, chocolate chips, and milk in slow cooker. Cover and cook on LOW for approximately 2 hours, or until the chocolate has melted. Serve warm, ladling into mugs, and add optional toppings.

As you can tell from this blog, I looove me some freezer meals. Our basement freezer was almost empty (gasp!) so I made 10 freezer-friendly recipes to stash away for our weekend meals. It took A LOT of time, but I figured it was worth it since I could buy everything at once, make a big mess in the kitchen at once, and then not have to worry about weekend meals for a long time.

Don’t have a lot of room in your freezer? You could always give some of these to families with a new baby, someone who’s having surgery, or even invite some friends over for a prep party. Split up the ingredients so everyone buys what you need, then make a day of making all the recipes (optional: add some wine to your shopping list! 🙂 )

2 cans condensed cream of mushroom soup

  • 1/4 c. blueberries
