Here’s an addicting Chex party mix idea: use pretzel goldfish crackers, ranch dressing mix, lots of cereal (just for the halibut I tried some Kix with the Chex, really got crazy in here ha), and baby goldfish crackers, seasoned with parmesan cheese and ranch. I made a big batch in a 12×19 inch foil pasta/roasting pan, and baked it in the oven. Here’s how it turned out…. And if you have other tasty snack mix recipes like this, let minnow. Get it?!? Oh fish puns.

Preheat oven to 250°F. Place butter in a large ungreased roasting pan, and put in the oven to melt. Add remaining ingredients in the pan, and stir until coated. Bake uncovered for 1 hour, stirring every 15-20 minutes or so. Spread on paper towels to cool. Store in an airtight container.

Here are some tiny apple pies I made with won ton wrappers! I just mixed up some cinnamon, sugar, and butter, wrapped it in won ton wrappers, and baked these bite-size pieces for a few minutes. Verdict: super easy and super delicious.

WHAT YOU NEED:

  • 2 apples, peeled and chopped
  • 1 Tbs. butter, melted
  • cinnamon (to taste)
  • sugar (to taste)
  • 24 won ton wrappers

WHAT YOU DO:

  • Preheat oven to 400F.
  • Mix the apples and butter in a bowl. Add cinnamon and sugar to taste.
  • Place won ton wrappers on a foil-lined baking sheet sprayed with nonstick cooking spray, then add apples as pictured and fold into triangles.
  • Bake for 10 minutes, or until slightly browned.

Here are a couple of quick snacks I made for the kiddos: our oldest is a peanut butter fan, and our middle child is more of a cheese fan.

Here’s what we ended up with…

CHEESY PINWHEELS: Sprinkle shredded cheese on a tortilla shell, microwave for a few seconds until cheese starts to melt, then roll up, and slice.

PEANUT BUTTER PINWHEELS: Spread peanut butter on a tortilla shell, then roll up, and slice.

If we make these again, I figured we could add granola, mashed up banana, and/or Nutella to the peanut butter one to make it more like “sushi” with different layers. You could also add salsa or sour cream to the cheesy type.

Here are some fruit kabobs I skewered for a shindig we had. After washing the fruit, I just put it on wooden skewers. It worked out perfectly to have individual servings.

These are also a great healthy snack to store in the fridge and just grab ’em out when you want something sweet and juicy.

I needed a couple of avocados for a recipe, and ended up with an entire bag of ’em (thanks, Costco, lol). I decided to use the rest in some homemade guacamole. I combined just a few simple ingredients and came up with this:

WHAT YOU NEED:

4 ripe avocados, sliced and mashed

3 cloves garlic, minced

lime juice (I used 2 Tbs. bottled)

2 Tbs. onion, chopped

Kosher salt, to taste

WHAT YOU DO:

Combine all ingredients and stir. Serve with chips.

I made a side dish over the weekend with a few simple ingredients, similar to Taco Bell’s “Pintos and Cheese.”

To lighten it up I used fat-free refried beans, chunky salsa, some onion from our garden, and shredded cheese.

It’s cheesy and filling. And has only 3 WW+ points per serving!

WHAT YOU NEED:

  • 1 c. fat-free refried beans
  • 1/4 c. chunky salsa
  • 1/3 c. shredded cheese
  • 1 green onion, diced

WHAT YOU DO:

Place beans in a microwave-safe bowl, then add salsa and cheese.

Microwave for 2 minutes or until heated through.

Garnish with onion before serving.

Taco Bell Copycat: "Skinny" Cheesy Onion Refried Beans

I used some pickling cucumbers that we bought from a local produce stand, and some fresh dill from our garden to make a salt & vinegar cucumber salad. It has only four ingredients but lots of flavor.

The entire batch is only 4 Weight Watchers Plus points!

I think this is a good alternative to salt & vinegar chips since it has the tanginess of salt & vinegar and the crunch of the cucumbers, but hardly any fat.

WHAT YOU NEED:

  • 2 cucumbers, washed & sliced (I used 8 pickling cucumbers since they are smaller)
  • 1/3 c. white vinegar
  • 1/3 c. water
  • 1 Tbs. Kosher salt
  • 1 tsp. sugar
  • 1/2 Tbs. fresh dillweed

WHAT YOU DO:

In a medium-sized bowl, mix together vinegar, water, salt and sugar. Add cucumber slices, then top with dill, and stir gently to combine. Refrigerate for a few hours until chilled.

Recipe makes 1 serving. Estimated Nutrition Per Serving:

Total Fat 0.8 g

UPDATE: I made this recipe using English cucumbers and instead of slicing them into coin shapes, I used a GEFU Spirelli spiral cutter tool. Here’s what it looked like…

I wanted to make a healthy snack with feta & avocado – two of my favorite ingredients.  Here’s what I came up with: Avocado, Feta & Tomato-Topped Pita Crackers

Here’s what you need:

• 9 Pita Bites baked pita crackers

• 1/4 c. Athenos crumbled feta cheese

• 1/4 of a haas avocado, cut into chunks

• 1 sliced Campari tomato

• lemon juice, to taste

• dillweed, to taste

What you do:

Lay the pita chip crackers on a plate, then top with feta, avocado, then tomato. Add a sprinkle of lemon juice, and then top with dill.

I love how you can use frozen Texas rolls for the dough. What a time saver.

Just a few easy ingredients; frozen buns, melted butter, garlic powder, salt and parmesan cheese. The dip has milk, butter, flour, and shredded cheddar cheese.

I made some pretzel bites topped with cinnamon and sugar from a recipe on justgetoffyourbuttandbake.com. They taste remarkably similar to donut holes but aren’t fried. The best part? You can use frozen Texas rolls for the dough.

So… here’s what I came up with for Baked Cinnamon Sugar Donut Holes: Just 4 easy ingredients; frozen buns, melted butter, cinnamon, and sugar.

Also, instead of cinnamon sugar, you can top with parmesan cheese, garlic, and salt. Yum.

Thaw rolls just enough to cut into 4 pieces.

WHAT YOU NEED:

  • 1 bag of Rhodes Texas Rolls
  • 1/2 stick melted butter
  • 1 1/2 tsp. cinnamon
  • 1 c. sugar

WHAT YOU DO:

Remove as many frozen rolls as you like; each roll makes four bites. Thaw until they are just soft enough to cut. Cut each roll in half, then in half again, for a total of four pieces from each roll. Place on greased baking sheet. Cover with plastic wrap sprayed with non-stick cooking spray, and let dough rise for 30-45 mins, until doubled in size.

After dough has doubled in size bring a large pot of water to a boil and put 10-15 pieces of dough in the water at a time, stirring gently for 45 seconds. Remove and drain on paper towels, then place on greased baking sheet and bake in preheated 375F oven for 15 mins.

After baking, brush each piece with melted butter and put pieces into a ziplock or paper bag. Cover with the cinnamon and sugar then shake gently to coat. Pour onto serving dish.

After cutting into pieces, place on greased baking sheet, cover with plastic wrap/non-stick spray, and let rise until doubled in size, for about 45 minutes.

Bake for 15 minutes @ 375F then brush with melted butter.
